In my experience lieges always revoke titles from hostile and evil faiths before they demand conversion, and since clan vassals have to have a hook to negotiate for religious protection it seems like it's almost impossible to not immediately be forced into a war against tyranny as a clan vassal with a different faith than your liege.

Your ruler does not have to become head of faith. Look into the settings for that when you create a new faith. But yes, I personally find it useful to create a new faith for an expanding empire. And you don't have to personally convert every county. If your vassals convert with you, they should be helping you with that.
