One farmer can harvest 200 tiles of grain with scythe (less with sickle) or 60 tiles of veggies per day. And round about 100 tiles per day plow, fertilieze or sow. Rye for animal feed, plant in fall, harvest in spring. Oat for animal feed, plant in spring, harvest in fall. Flax for money/bags for the farms/clothing to sell, plant in the spring, and harvest in summer. I don't worry about carrots, onions, or even orchards unless I want my cooks to start making other food items or beers/wine late game.
