You can hunt a deer by throwing one wooden spear at its head, then run at it with an axe. You need to be quick. It will still outrun you with the single spear hit, but if you can get in the additional axe hit, it will be slower than you.

One think i can recommend though, if you like to take your time - especially in the beginning - is to change the season length in the customisation settings.
