It's just kinda better optimized. Most of the job of Cemu was originally to just optimize for BOTW specifically. However well the Switch game runs for you, the Wii U version probably runs a lot better on Cemu (if you mod the Switch version to run at 60, both Yuzu and Ryujinx struggle to get to game running well, playing it in slow motion.

I tried deleting DLC and updates and if I delete only updates, it won’t let me start the game. If I delete only the DLC, it still has the same red issue.

I had one that had encoding of "UTF-8", but all the others were "UTF-8-BOM".
